Which biochemical change best explains why egg white becomes firm when an egg is boiled?

ExplanationAnswer and explanation

Answer: (A) Denaturation of proteins caused by heat

Egg white becomes firm on boiling because of the denaturation of proteins caused by heat. Heat breaks the three-dimensional structure of the protein, and the protein chains become entangled with each other, forming a solid network. Hence the correct answer is option (1).
In this process the primary structure of the protein, that is, the sequence of amino acids, does not normally change.
The main protein of egg white is albumin.
Apart from heat, acids, alkalis and heavy metals can also denature proteins.
Curdling of milk and the setting of curd are also examples of protein coagulation.
